Hawaiian Pork Recipe

2 -3 pounds pork loin
1/2 cup soy sauce
1/2 cup brown sugar
1/4 cup ketchup
1 - 15oz can pineapple chunks - (including liquid)
3 tablespoons rice vinegar
1 tablespoon minced garlic
1 tablespoon paprika
1 tablespoon sriracha
1 teaspoon freshly grated ginger
1 red pepper chopped
1/2 cup water
1/4 cup corn starch

Whisk together the soy sauce, brown sugar, ketchup, the liquid from the can of pineapple chunks (you will add the chunks over the meat in pot), rice vinegar, and minced garlic, paprika, sriracha, ginger.
Whisk together the cold water and corn starch until dissolved. Stir into the sauce mixture.
Pour half of the sauce mixture into the slow cooker.
Add pork loin in the slow cooker along with the pineapple chunks and red pepper.
Pour the rest of the sauce over the top. Cover and cook on low for 8 hours.
Pull out pork and shred, add back into sauce.
Serve pork loin over rice (coconut rice is my fav for this!)

If you want a thicker sauce add more cornstarch mixture.
If you notice at the end of cook time that it's not thick enough, you can add more of the cornstarch mixture and cook the sauce down on low/medium heat for a few minutes until you have what you want.
